THIS is the EASIEST healthy “junk food”, but not really junk food, snack that is so dang fun to make and eat! The star of this dish is the Date Lady Date Sauce and/or Caramel Sauce that I finally tried, and OMG, it’s such a great treat to hand! We are in the midst of a full on kitchen remodel right now, so the past few weeks have been all about EASY snacks. This snack takes less than 5 minutes to make from start to finish.

First the Date Lady date Syrup has ONE INGREDIENT: Organic Dates. It has a caramel like consistency, pairs perfectly with apple slices, sweetens tea nicely, and does not need refrigeration so it travels well too!
Then there is the Date Lady Caramel Sauce. It is made with: organic dates, natural caramel flavor, sea salt. To me it tastes like caramel, has a consistency of caramel, and does everything that a good caramel sauce does. It’s a winner.
And last but certainly not least is the Date Lady Chocolate Spread. Um, Ya. Trust me, You NEED this in Your Life. For those times when you want a vegan, paleo, refined-sugar-free chocolate truffle dessert, but you don’t want to go to the trouble of making one, you simply dig a spoon into a jar of this chocolate goodness, and enjoy some of the best store bought chocolate I’ve ever had. Ingredients: Organic date syrup, organic cocoa, organic coconut oil, organic cocoa butter, vanilla, sea salt, pectin.

Caramel Apple Nachos
- 1 apple I like pink lady apples
- 1 Tablespoons to 2 Date Lady Date Syrup or Date Lady Caramel Sauce
- 2 Tablespoons sugar-free dark chocolate chips or carob chips see recipe notes!
- 2 Tablespoons dried blueberries
- 2 Tablespoons chopped walnuts AIP use chopped tiger nuts or toasted coconut flakes
- optional: a pinch of flaked finishing sea salt
Slice apple. Arrange apple slices on a plate.
Drizzle apple slices with date syrup or caramel sauce. (or make your own caramel using this caramel recipe)
Sprinkle on chocolate chips, dried blueberries, and chopped nuts.
