Egg-free Paleo Pumpkin Mugcake (vegan option)

This new “vegan” + paleo mugcake recipe came about as I wanted to offer the readers of my new cookbook some super simple mugcake treats, and make sure those who don’t eat eggs could also indulge. Here is a link to the vegan + paleo banana bread mugcake version.

Vegan + Paleo Banana Bread Mugcake

This is another recipe that recently came about as I was trying to come up with some new egg-free, paleo, muffins and simple treats. If you try this recipe, please let me know what you think! I also have this vegan + paleo pumpkin version.

For a single serving size I make it as listed below and microwave it for 90 seconds. Some of the images pictured show a double batch, where I doubled all of the ingredients and microwaved it for 2 minutes. Unfortunately, all of my tests done baking this recipe in a regular oven did not turn out right, so I can only recommend this recipe be made using a microwave. I know, I am not all that crazy about cooking in the microwave, but dang, it really does make perfect mugcakes!

Autoimmune Paleo Samoa Girl Scout Cookies

I realized the internet was seriously lacking when it came to Autoimmune Paleo Girl Scout Cookie recipes. So I reworked a recipe for a raw, vegan, Paleo Samoa Girl Scout Cookie I developed a few years ago, and came up with this new nut-free version that is every bit as amazing, and magical. And I cannot believe it’s also an auto-immune paleo friendly cookie, cuz it sure don’t taste like a cookie you would get to enjoy on a restricted diet!! So far this toasted coconut caramel cookie has received fabulous reviews from friends and family. And I have a feeling my starch-free Paleo AS friends will appreciate it too, as this cookie is as low-starch as you can get! (PS: “low starch” does not always mean “low carb” as starch is a carb, but not all carbs are starches. So while this version is not made with refined sugars or grains like a traditional cookie, this cookie does have some carbs as its sweetened with dates and a little maple syrup.) ♥…

AIP Donut Holes w/ Cinnamon & Tigernuts

EVERYTIME I make these “donut holes” I am blown away by how delicious and satisfying they are. They totally take me back to memories of eating my favorite crumb donuts as a child. Rosemary Apple Sauce – Paleo – Instant Pot

I gotta give my Instant Pot credit for renewing my love for homemade apple sauce. It’s sooooo easy to make apple sauce in the Instant Pot that it becomes a crime not to take advantage of all the free apples I have growing in our little orchard! We get hundreds of pounds of apples from our trees each year, and each year we do our best to harvest bushels of them which end up being made into hard apple cider, fresh apple juice, apple pies, applesauce, and add them to cheese & cracker snack plates. Of all the things we do with the apples, making apple sauce and fresh juice are the easiest!

There is something so magical about eating food you’ve watched develop from a delicate blossom to a delicious fruit, picked the fruit with your own hands, and used to create delicious recipes you and your family can enjoy! Being apart of the cycle of growing and enjoying nutrient dense organic foods is one of my favorite ways to celebrate life!!…

Oh my goodness did I recently test through a TON of unsuccessful grain-free pumpkin bread recipes! No matter what combo of almond flour, coconut flour, and ground chia I experimented with, I kept ending up with loaves of pumpkin bread that were on the mushy, almost soggy side. Ick! These Paleo caramel ice cream bonbons are the prefect treat! You only need 3 or 4 to satisfy a sweet craving, and per serving a few bonbons works out to be a fraction of the calories you’d find in a bowl of ice cream. Serviceberry – Saskatoon Berry – “Wild Blueberry” Pie

Wild Serviceberry Pie is one of my most favorite pies, EVER. Serviceberries, also called Saskatoon Berries, and June Berries, taste like a blueberry mixed with wild huckleberry. And the flavors really come out and dance when these berries are heated up. Once slice of this wild berry pie, and you will see why I consider serviceberry pie to be the ultimate rustic wild fruit pie! Wild Elderflower Fritters

There is something so magical about being able to take a leisurely morning hike in the woods to pick your breakfast!! It’s mid June here in the Oregon Coast Range and the blue elderberry plants are in full bloom! And so are the “wild” feral pie cherries growing along the countryside, one of my most favorite fruits, which I also picked for this meal! But the true star of this recipe is the blossoms of the wild blue elderberry plant. So yes, when you eat the blossoms you are eating potential fruit, but where I live elderberries grow in such abundance, it’s hardly noticed that I’ve made breakfast from a few of the blossoms. I use the “blue elderberry” blossoms, which are actually white, as the red elderberries are said to be somewhat toxic to humans (this info varies based on which source you check). And the red elderberries are also said to be less palatable for this reason too. I should also note that it I’ve read there is some cyanide-inducing glycoside in the blue elderberry stems and leaves, but the berries and blossoms are edible, and as you surf the web you will find endless testimonies of people enjoying elderflower fritters with no ill effect. Most seem to also consider the tiny stem fragments that hold the blossoms together harmless, so I just cut off or eat around the larger stems.

I first learned about making wild edible elderflower fritters and pancakes from my most favorite wild food adventure book, “Foraging the Mountain West” I highly recommend this wild food guide whether foraging in your own neighborhood or for taking along on summer camping trips. We take this book on every outdoor adventure we go on! And from this book I have learned tons of neat tricks and tips on how to enjoy the bounty of wild foods that are growing all around us everyday!

Low Carb Crepes & Pancakes – dairy-free, keto

These low carb crepes seriously remind me so much of the original “gluten-filled” crepes I remember eating as a kid. Yet these are crepes are totally gluten-free, grain-free, and nut-free too! A lot of times we can create a “paleo version” of something, but that doesn’t always mean it tastes good, or has the right texture. But to me, these paleo crepes have the perfect crepe texture, and taste great too. I think of them as a gourmet gift to a grain-free, low carb breakfast.

The other best thing about these crepes these crepes is that they are dairy free AND low carb! So many of the keto recipes I come across these days include dairy. And while I can personally eat goat & sheep cheese (I still can’t eat any cow based dairy), I know a lot of folks can’t tolerate any dairy, and they totally deserve yummy low carb pastries and baked goods too!

Berry Shortcake Crumble

This summer berry shortcake crumble could not get any simpler! Just toss together your favorite cookie crumbles, add a layer of ripe summer berries, and top with coconut whip cream. You can use whatever fresh summer fruits you have on hand, like strawberries, raspberries, cherries, peaches, or blackberries. I always keep a stash of frozen cookies and raw chocolates in the freeze (for emergencies, ya know), and I make this dessert recipe often, cuz let’s face it there are lots of times when I am craving a fancy “baked” dessert, but I don’t feel like actually baking anything. I have included options below to make this dessert, vegan, egg-free, paleo, and low carb depending on which cookie crumble recipe you choose.

Low Carb Chocolate Chip Cookies – paleo

I made these low carb chocolate chip cookies over 18 different ways before finally deciding it was my perfect version of a nut-free, low sugar, chocolate chip cookie. My favorite version uses maple sugar as the sweetener, which can easily be subbed with lakanto or other granulated sweeteners like coconut sugar. You can also use a liquid sweetener like maple syrup or honey. What’s the main difference? I like the firmer texture you get when using a granulated sweetener, compared to the softer texture you get with a liquid sweetener. In the photos the lighter, slightly smaller cookie is the one I made with maple sugar crystals. The slightly larger more golden cookies were made with maple syrup (same result from using honey too) but I much prefer the firmer cookie result from using a granulated sweetener. I also love using goat milk butter, but this recipe worked equally well 100% dairy free with avocado oil, and should also work fabulous with coconut oil, sustainable palm shortening, etc.
