Flax Waffles (grain free, low carb, paleo, keto)

If you like my Flax Jacks Pancakes Recipe (post here), then I think you are going to love these Flax Waffles! They are light and have almost a buttery taste and texture to them. I just took my pancake recipe and added in some organic expeller pressed coconut oil (expeller pressed coconut oil has no coconut taste). I also made a successful batch of waffles without the added fat, but really like the texture best with it. I personally like the taste and color of golden flax seeds best, but feel free to use dark brown flax seed meal in this recipe if you please.

Flax Waffles - paleo - nut free - low carb - keto - vegetarian

Flax Waffles

  • Servings: 2 people (makes about 4 to 5 waffles)
  • Print

ingredients:

  • 1/2 cup ground golden flax seed meal
  • 2 large pastured eggs
  • 1 Tablespoon coconut oil, (or other fat/oil like MCT oil, or organic palm shortening)
  • 2 Tablespoons dairy free “milk” (or use water) 
  • 1 teaspoon lemon juice (or 1/2 teaspoon apple cider vinegar)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • tiny pinch sea salt
  • optional: a little sweetener of your choice (I don’t use any)

directions:

  1. Plug in your Waffle Maker to heat it up.
  2. Mix ingredients together in a bowl until you have a smooth batter. If you need to add in a little extra nut milk/water to get it smooth, you can do that too.
  3. When the waffle maker gives you the green light, spray it with the olive oil using a mister.
  4. Add batter, and follow waffle maker directions.
  5. This batter gave me enough to make 5 Belgian style waffles.
  6. I topped these waffles with fresh blueberries and a dollop of coconut whip (recipe here) and it was super delicious. You can also top them with maple syrup, berry jam, or turn them into a savory breakfast sandwich.

Makes 2 Servings. Estimated Nutritional information based on eating 2 waffles = Calories per serving: 244,  Total Fat: 18 grams, Total Carbs: 11 grams, Fiber: 8 grams (Net Carbs: 3 gram), Protein: 12 grams.

      Yes it will work. If you read above I mention you can also use dark brown flax meal in the blog post. I just personally like the taste and appearance more of the golden. Whatever you use, it just needs to be ground finely.

  3. Here’s a little extra tibdit. If you are in TUcson you can buy it even cheaper at the bread outlet on Broadway by the Dunn Edwards. Also, try using 2 tbsp flax meal, 3 tbsp water and 1/8 tsp baking powder per egg. It gives it a little more lift and a little extra flax. I use this sub in all my pancakes, waffles, cookies and almost anything else I can.

  4. this appears to be the exact recipe for your flapjacks, but doubled.
    is it safe to assume, then, that this batter can be used to make pancakes instead?
    I don’t have a waffle-maker!

    Yep, they are basically the same base ingredients, and either recipe is easily doubled or tripled. And instead of adding the MCT oil to the batter, you can use it to cook the pancakes with instead, by adding it to the pan or skillet. I just recommend cooking the pancakes over a medium-low heat to avoid burning them, as burnt flax is not yummy.

  7. Thank you for the recipe. I wonder if I could adapt my flax-hemp crackers recipe to make them in the waffle maker. That’s to save time on heating up the oven and all that. To make the cracker, I spread on parchment paper the mix of about 6tbsp ground flax + 6 tbsp ground hemp +onion powder/paprika/garlic powder + water and bake it at 350 for 10 min or so. I don’t like too-crispy crackers, so the semi-crispy flatbread works for me.
    In your opinion, would it work if I simply put my ‘batter’ in the waffle maker instead, or would I need to change something?

    1. So far all of my attempts to make egg-free flax things on the waffle maker have failed, like when I tried to come up with a “vegan flax waffle”, it didn’t work out. I’m not saying it’s impossible, but I don’t have the secrets on how to do it! Cheers!

  8. I just made these and they did not come out well at all. They looked very nice, but tasted like springy egg with a weird dry graininess (presumably from the flax). I grinded the flax to make it finer before using. With maple syrup and berries it was edible, but did not taste good on its own. Did I do something wrong? It seemed that the flax didn’t really absorb any liquid or puff up, but instead retained its texture. Is this just to be expected due to being a seed and not a grain?
