A High Protein Hemp Seed Bread

I love to use this mug-in-a-muffin, hearty seed bread for almond butter and jelly sandwiches. It also works well slathered in homemade mayo, with pasture raised turkey & avocado, or use it as a breakfast biscuit and fill this sucker with a sausage patty and egg.

This simple Hemp Seed Paleo Bread is packed with protein from Hemp Seeds (7 grams protein!), Chia Seeds (2 grams protein!), and 1 Egg (6 grams protein!) That means there are 15 grams of protein per serving of this bread, then add a high protein meat to it, and you are off to the races! I hope you enjoy this Hearty Grain-free Sandwich Bread too!

This recipe makes 2 slices of bread at a time, quick and easy.

High Protein Hemp Seed Bread

A quick & easy hemp seed based bread that can be mixed up and microwaved in minutes! Nice hearty low carb, wheat-free, Paleo bread!

Calories 216 kcal

Ingredients

  • 1 Tablespoon ground chia seeds
  • 2 Tablespoons hemp seeds aka, hemp hearts
  • 1/8 teaspoon baking soda
  • 1 egg

Optional

  • 1 teaspoon coconut sugar or low carb sweetener, adds flavor
  • 1 teaspoon black strap molasses adds flavor

Instructions

  1. Grind only the chia seeds into a “flour” in a coffee grinder, or spice grinder.

  2. Mix all ingredients together in the order they are listed.

  3. Grease a small square 4” x 4” dish or a mug.

  4. Microwave for 90 seconds (up to 2 minutes if needed).

  5. Let cool.

  6. Then flip over dish to release, slice into two halves, and use as a sandwich bread.

It also works well for turkey sandwiches, or used as a breakfast biscuit with sausage and egg.

I have not tested this recipe with flax seed yet, but assume you can use 1 Tablespoon of ground flax seed in place of chia seed.
