I started out on the journey to heal my gut 8 years ago because I had no choice. I was suffering from so much inflammation in my GI tract that I could not longer eat anything it seemed without extreme bloating, cramping, and pain. I had to piece together my own diet through the process of elimination. I started out by eliminating gluten, dairy, corn and soy. I eventually discovered the Specific Carbohydrate Diet, SCD, which was a big game changer for me. I followed the SCD diet with great results in controlling my IBS and colitis symptoms. A year later I finally got the ankylosing spondylitis, AS, diagnosis and went on to discover the work of Dr. Alan Ebringer, a London rheumatologist and researcher, who developed the low starch diet for AS.
Getting hit with a hard to pronounce autoimmune disease I had never heard of was a big life changer in my early 30’s. I compare it to getting hit by a Mack truck, as the pain I endured from this ugly disease called ankylosing spondylitis brought my life to a screeching halt in my late 20’s. But back then I was going from doctor to doctor being misdiagnosed and feeling ignored as the disease attacked and fused a large section of my spine together.
The lower back pain and sciatica started in when I was 20 years old. I saw a number of different health professionals but none of them suspected there I was dealing with autoimmune disease. In my late 20’s hellacious IBS and colitis came on, and began to rule my life. Again I went back to the doctors to seek treatment but in the end left feeling like I was being ignored and told the cause of my pain was likely “depression” so I started to take the treatment of my body in my own hands. But by age 32 the AS had done so much physical damage to my spine, it was no longer an “invisible disease” and I was finally diagnosed with ankylosing spondylitis.
Following the low starch diet has given me the most significant results in controlling the pain and inflammation in my gut, spine, and body. I know for my body eating a grain-free, soy-free, nightshade-free, casein-free, low starch diet is critical for managing the disease of AS and inflammation in my body. I am so incredibly thankful I found it, as life without it is just way to painful to endure.
There are a wide variety of alternative therapies one can use in addition to following a healing diet. Over the years I have tried just about every alternative therapy under the sun and I have seen chiropractors, acupuncturists, naturopaths, massage therapists, physical therapists, a pain psychologist, a functional medicine doctor, and I have consulted with traditional general practitioners and rheumatologists. I have tried cold laser therapy, physical therapy, ultrasound, radon mine therapy, PEMF therapy, infrared saunas, soaking in mineral hot springs, herbal pain relief topical treatments like Tiger Balm, essential oils, the Rife machine, parasite cleanses, candida cleanses, taken these supplements, along with pool exercise classes geared to those with arthritis, yoga, and meditation. The alternative therapy that has helped me the most is Rolfing which is a form of bodywork that works on the connective tissues, called fascia, that permeate the entire body, and my Rolfer Jan Schroeder is my guardian angel. I always say, “Rolfing hurts so good.” I have also gotten great results with the occasional green juice fast, and of course my low starch paleo diet is crucial in managing my daily pain levels. For me this cookbook is a true celebration of life! These are the recipes that I eat daily. The dishes I share with friends and family. After having to spend so many years sitting out at dinner parties with an empty plate or a serving of lettuce, I decided to reinvent the starch free diet with foods that everyone will enjoy. These are the recipes that my friends and family truly love, and most of them have zero food restrictions, but they still love these recipes! And that is why I wrote this book. Because health should be something we can all celebrate together with a pure and simple approach. And just wait until you try my starch-free, grain-free bread!
