Grain Free Gingerbread Waffles

Grain-Free Gingerbread Waffles (paleo)
This is a fun low starch, grain-free, breakfast recipe to enjoy with the whole family on a fall weekend or special holiday! This recipe makes approx 8 smaller sized Belgian waffles, which works out to 4 servings, with each person getting 2 waffles. I like to serve these waffles with a side of candied pasture raised bacon or my herb breakfast sausage patties, and both recipes are in my cookbook. I imagine these waffles would also be wonderful with a side of spiced apples or scrambled eggs. I have included instructions below for a gingerbread icing so everyone can decorate these waffles in the same way they might decorate a gingerbread house.

This vegan chocolate mousse is pure magic. You will be amazed at what a creamy fig pudding you can make by simply blending dried figs with coconut milk. You’d swear there is a cashew or nut involved, but there isn’t! In some ways this pudding reminds me of chia pudding, but without the chia seeds. And though you may have the slightest texture of small tiny fig seeds in your pudding, I still find it to be much smoother than chia pudding.  You can make this pudding in a variety of flavors like vanilla, carob, and raw chocolate. I am usually not a big fan of carob but I really love it in this pudding!

You guys, I am currently addicted to roasted golden beets with fennel and red onion. Like seriously. I am making up for lost time. See I gave up beets 4 years ago when I decided to do the starch free diet for the auto-immune disease I am fighting. This Hawaiian Teriyaki Bowl is a little burst of sunshine on a cold rainy day! I so hope you guys get a chance to try this recipe and experience the sweet and savory flavor explosion going on here! This my friends, is my favorite way to eat pasture raised pork from Lonely Lane Farms in Mt. Angel Oregon. When it’s had an overnight bath in my simple pineapple teriyaki sauce full of raw enzymes to tenderize it, and then it’s simply grilled for a few minutes on each side before being paired with lightly caramelized grilled pineapple and softened red onions. Over a bed of tart and tangy red cabbage slaw. Yes. This bowl delivers an little island paradise right into my cold Oregon autumn day.

This Chicken “Lo Mein” or “Subgum” Chow Mein is just as addicting and crave-worthy as the msg laden stuff I used to love as a child. And oh, I loved Chinese food as a kid. On the special occasion nights that we got take out my mom would have to go through the drive through for my little sister’s plain hamburger no sauce and fries and then dart across the street for my Chinese food special #5 that came with subgum chicken chow mein (or low mein), sweet and sour chicken, hot and sour soup, and egg rolls.  It’s no wonder I have dedicated so much of my blog to recreating these Chinese food favorites, as they became my favorite “comfort foods” at such a young age. I now prefer my grain-free, paleo versions to the “fast food” served in many Chinese restaurants these days too! Let’s face it high quality pasture raised meats, organic veggies, and soy-free meals taste so much better and make ya feel better too.

I love that there are only 2 ingredients in this recipe: Watermelon + Sea Salt. And both ingredients that I used were made right here in Oregon. I used Jacobsen’s sea salt harvested not too far from our house, off the Oregon Coast. We took a tour of his salt works facility last summer, see this post for pics.  If you have a high quality finishing flaked sea salt this is the recipe to use it in! And if not any pure sea salt will work too. I also used an organic Oregon grown watermelon so – talk about a “local” food recipe!
