A quick & easy hemp seed based bread that can be mixed up and microwaved in minutes! Nice hearty low carb, wheat-free, Paleo bread!
Grind only the chia seeds into a “flour” in a coffee grinder, or spice grinder.
Mix all ingredients together in the order they are listed.
Grease a small square 4” x 4” dish or a mug.
Microwave for 90 seconds (up to 2 minutes if needed).
Then flip over dish to release, slice into two halves, and use as a sandwich bread.
I like to use this bread for almond butter and jelly sandwiches.
It also works well for turkey sandwiches, or used as a breakfast biscuit with sausage and egg.
I have not tested this recipe with flax seed yet, but assume you can use 1 Tablespoon of ground flax seed in place of chia seed.
